Founded in 1999 as the successor to Mortimer’s, Swifty’s quickly became a go-to destination for socialites, celebrities, and locals alike. The restaurant’s Palm Beach pop-up at the Colony Hotel has been a huge success, proving the timeless appeal of its formula.
