This past summer, East Hampton was treated to the return of celebrated restaurateurs Cédric and Ochi Vongerichten as their acclaimed New York City restaurants, Wayan and Ma•dé, brought their signature French-Indonesian style to the East End. From May 22 through August 31, the couple hosted a seasonal residency at EHP Resort & Marina in Springs, blending Southeast Asian flavors with local Hamptons ingredients in a stunning waterfront setting.
Overlooking Three Mile Harbor, the residency replaced Sunset Harbor as the resort’s second waterfront dining option, joining Sí Sí Mediterranean Restaurant, now in its fifth season. Guests enjoyed “Sunset Bites” in the early evening, with small plates like oysters with chili-lime mignonette, popcorn shrimp with sambal oelek, and a warm Balinese lobster roll, before moving into full dinner service.
The menus highlighted fresh, seasonal ingredients with globally inspired flair, featuring dishes such as tuna tartare with green chili sambal, mango salad with cherry tomato and cashew, fluke sashimi with calamansi dressing, crab fried rice, pork ribs with soy tamarind glaze, whole black sea bass with sambal tomat, and indulgent lobster noodles with black pepper butter and Thai basil.
Arrivals by boat added to the experience, as guests docked at EHP Marina to enjoy the combination of world-class dining and Hamptons charm. For the third year in a row, Wayan & Ma•dé successfully captured the spirit of summer on the East End, creating memorable moments with food, flavor, and a one-of-a-kind setting.
