For nearly two decades, Inlet Seafood Restaurant has been a cornerstone of Montauk dining, guided by a simple but powerful philosophy: Respect the ocean. Harvest the bounty. Feed the people. Owned by six local fishing families, Inlet is deeply connected to the waters that surround it, serving local, sustainable seafood often caught by the very families behind the restaurant.
At the heart of the kitchen are Master Sushi Chef Jun Lin and Executive Chef Lawrence Wallace, who have worked together for over a decade. Their collaboration blends refined technique with a deep respect for the ingredients, resulting in dishes that feel elevated yet true to Inlet’s fisherman roots. The sushi program remains a standout, complemented by a thoughtfully curated cocktail menu.
The leadership team reflects the same sense of continuity and community. Amanda Jones, a member of one of the founding fishing families, oversees operations across the property, while Linda Wiegardt, a Montauk native and longtime member of the Inlet team, leads the restaurant as General Manager. Together, they continue to evolve the restaurant while staying true to its origins.
