Sagaponack Farm Distillery Earns Prestigious “Snail of Approval” Award

In a region defined by its agricultural heritage, Sagaponack Farm Distillery has achieved a significant milestone by receiving the Snail of Approval from Slow Food East End. This recognition is awarded to businesses that demonstrate an exceptional commitment to quality, environmental stewardship, and community. For the Foster family, who have farmed this land since Captain Joseph Foster founded the homestead in 1870, the award validates a 155-year legacy of working the soil.

Today, the sixth generation—siblings Marilee and Dean Foster—manages 150 acres of land strictly preserved for agricultural use. Their approach to the land is rooted in a balanced permaculture and no-till philosophy. While they continue to grow a variety of produce for local eateries and maintain active hives, the 2013 launch of their distillery provided a vital new revenue stream for their traditional potato crop, ensuring a sustainable future for the family farm.

What truly sets Sagaponack Farm Distillery apart is its rigorous “Seed to Glass” endeavor. Every spirit is crafted using natural, whole ingredients—such as whole potatoes rather than processed flakes—all harvested directly from their acreage. Their commitment to the ecosystem is evident in the fields, where cover crops are grown between seasons and buckwheat is planted between rows to minimize weeds and encourage pollinators. In a closed-loop system that significantly reduces the farm’s carbon footprint, all by-products from the distillation process are returned directly to the soil.

The distillery’s tasting room, housed in a historic barn on Sagg Road, has evolved into much more than a retail space; it is a vibrant gathering spot for live music and community connection. By blending century-old tradition with modern sustainability, the Fosters are proving that the most successful businesses are those that nourish the land as much as the people.

As a Snail of Approval recipient, Sagaponack Farm Distillery stands as a model for the North Fork and South Fork, proving that heritage and innovation can go hand-in-hand to preserve the soul of the Hamptons.
