South Fork Sea Farmers Expand Shell Recycling Network Across the Hamptons

The South Fork Sea Farmers have hit an impressive environmental milestone, expanding their shell recycling network to include 25 and counting premier restaurant partners across the East End. Stretching from Southampton Village all the way to Montauk, this rapidly growing coastal preservation initiative keeps valuable oyster and clam shells out of landfills and routes them back into local waters to rebuild critical marine habitats.

This extensive network relies on a dedicated community coalition. Local chefs and restaurant owners are actively going the extra mile to separate and salvage discarded shells from their daily seafood service. The logistics of the operation are kept in motion by a passionate team of shell shuttle volunteers alongside the corporate logistical backing of Mickey’s Carting, ensuring seamless transport from busy commercial kitchens to treatment facilities.

The hospitality lineup includes a robust mix of iconic Hamptons dining institutions and gourmet markets. Among the partners leading the sustainability charge are Almond, Jean-Georges at Topping Rose House, Bostwick’s Chowder House, LUNCH Lobster Roll, Rita Cantina, and Citarella Gourmet Market. As the collection route continues to scale, South Fork Sea Farmers are actively inviting more commercial eateries on the South Fork to join the coalition and help fill in the eco-map.

Beyond commercial restaurant partnerships, the nonprofit makes it easy for everyday households to participate in the restoration effort. Residents can clean and drop off their own home-consumed oyster and clam shells at four centralized public drop-off stations. These dedicated collection points are strategically situated across the South Fork, operating out of the Conscience Point Hatchery in North Sea, Shellworks in Southampton, the South Fork Natural History Museum (SOFO) in Bridgehampton, and the East Hampton Dock on Gann Road.

By scaling up both residential and commercial collection tracks, the organization continues to turn food waste into an environmental asset. The recycled shells serve as a foundational anchor for new, living oyster reefs that naturally filter water and protect the delicate marine ecology of the East End bays.
