Rooted in the historic Bridgehampton Silt Loam soils of the East End, Amber Waves Farm has transformed from a modest, vision-driven wheat trial into one of Long Island’s most comprehensive agricultural nonprofits. Founded in 2009 by Katie Baldwin and Amanda Merrow following a shared apprenticeship, the 45-acre Amagansett operation bridges commercial crop production with hands-on educational programming and equitable food access.

The organization functions as a living classroom, featuring a vertically integrated pipeline where lettuce sown in on-site greenhouses is harvested by apprentices, served at the farmstand kitchen, and donated in bulk to regional food pantries. Through a rigorous apprentice program, an interactive outdoor children’s curriculum, and open public fields, the farm trains the next generation of growers while connecting thousands of visitors to the origins of their food.

A pivotal milestone came in 2016 when Amber Waves secured permanent ownership of the property, preserving a historic line of female stewardship on the land dating back to the 1950s.
